Or, un nombre croissant de chercheurs en médecine dénoncent ce qu'ils considèrent comme un vaste mensonge, façonné à la fois par une série d'approximations scientifiques et par de puissants intérêts économiques, de l'industrie agroalimentaire d'abord, des laboratoires pharmaceutiques ensuite.
